Vegan carrot salad with dried cranberries and mandarin | A House of Lemons

Recently, we made some vegan sausages (recipe coming soon) and I wanted something fresh and a bit sweet to go with it, so we made this carrot salad. Very fast, very easy and goes well with something savoury.

 

Servings: 2 Preparation: 10 min

Ingredients:

3 medium carrots

1/4 cup dried cranberries

1 large mandarin

pinch of black pepper

pinch of nutmeg

2 tsp white wine vinegar

 

Instructions:

  1. Grate the carrots.

  2. Peel the mandarin and cut it to smaller pieces.

  3. Add all the ingredients to a bowl and mix well.

  4. Let it sit in room temperature for 5 min before serving.

  5. Serve on its own or with something more savoury (e.g. vegan sausages).
