Whipped lingonberry semolina porridge | vegan
This lingonberry semolina porridge is a traditional Finnish dish eaten mostly for breakfast or even dinner, but I can see this work as a great dessert as well. If you follow this recipe, the porridge will turn out not very sweet, even a bit sour. Finns like to eat it with a bit of milk. It makes it bit less sour. Alternatively, you can just add more sugar while boiling it. I personally prefer the milk version with less sugar.

Ingredients:
700 ml water
300 ml of whole lingonberries
pinch of salt
100 ml sugar
100 ml semolina
Instructions:
Blend the lingonberries.
Pour the water to the pot and add the blended berries. Bring it to a boil and let it boil on high for about 3 minutes.
(optional) Remove the pot from the heat and sieve it, so you're left with clear red water without any berries.
Add the salt, sugar and semolina to the water and let it boil on medium-high heat for about 10 minutes. When the porridge is cooked well, it should be quite thick in consistency.
Let it cool down completely. It will turn a bit lighter in colour.
When the porridge is cool, whip it with a mixer until it's smooth. Put it in a fridge.
Serve it when it's cold. You can eat it as it is or with a splash of plant milk. Store in the fridge.
