Smokey tomato salsa | vegan
Last weekend our House of Lemons was a bit fuller than usual as we had some friends visiting. For that occasion we sliced some veggies and fruit, sauteed some mushrooms and beans and prepared this great smokey salsa for delicious tortilla wraps.
Tortilla vegetable wraps are just a perfect choice for a friends lunch or dinner. You can serve multiple vegetable or fruit options, beans, mushrooms, anything really. It allows everyone to build their own wrap with whatever they like the most.
So go ahead, and make some of these next time you have some friends over and don't forget to prepare this smokey salsa to combine all of those fresh and amazing tastes. It also works great with bean burgers. We ate it with our beetroot & black-eyed bean steaks.
Servings: 4-6 Preparations: 15 min
Ingredients:
5 medium tomatoes
1 medium red onion
2 garlic cloves
1 tsp chipotle powder
1 tsp smoked paprika powder
1 tsp salt
1 tsp dried ground coriander
2 Tbsp white wine vinegar
Instructions:
Cut the tomatoes to small pieces.
Put all of the ingredients except the tomatoes to a blender and pulls a few times so the onions and garlic are chopped but not too mushy.
Combine the tomatoes with blended ingredients and mix well.
Let it sit in room temperature for 5-10 min and then serve with tortillas, bean steaks or anything you desire.
