One pot red and green lentil veggie chilli | A House of Lemons

I know it's not a cold winter day, but I've been craving for a burning chilli for a couple of weeks... ever since we played Scoville. It's a chilli farming themed board-game. Yep.

After playing it a couple of times, I realized that I need to make a chilli asap. So I did.

Here's one deliciously burning recipe for the end of this summer or approaching autumn. I hope you'll enjoy it whenever you decide to make it!

 

Servings: 4 Preparation: 10 min Cooking: 45 min


Ingredients:

1 medium onion

3 cloves garlic

1 red habanero pepper (seeds removed)*

1 yellow habanero pepper (seeds removed)*

2 medium carrots

1 red bell pepper

1 small zucchini

1 can (400 g) tomato crush

1/3 cup (60 g) red split lentils**

2/3 cup (120 g) whole green lentils**

1/2 tsp chipotle pepper flakes

1/2 tsp ground cumin

1 tsp ground coriander

1 tsp smoked paprika powder

2-3 bay leaves

black pepper to taste

1,5 tsp salt

2 Tbsp white wine vinegar

1 Tbsp olive oil

4 cups water


*This chilli recipe is rather hot, so I suggest start with one habanero or even half of it and add on that if it's not hot enough.

**Make sure you use both split and whole lentils. Split ones will give thickness to the dish, while whole ones will provide a totally different texture and sensation.

 

Instructions:

  1. Chop all the vegetables and chillies.

  2. In a big pot heat up 1 Tbsp olive oil. When it's hot add the chopped onion and garlic. Fry it for a 1-2 min until it softens a bit. Then add the habanero pepper and 1 cup of water.

  3. Add the cumin, coriander, smoked paprika, and bay leaves. Mix everything well.

  4. Throw in the carrot. Fry it for a couple of minutes and then add the zucchini and the bell pepper. Stir everything well for a minute.

  5. Pour in the tomato crush with the remaining water. Bring the water to boil and reduce the heat to medium.

  6. Add both red and green lentils and let it boil for 30 min stirring it occasionally.

  7. After 30 min add the salt, black pepper and the vinegar. Mix it well and let it boil for another 10 min or until green whole lentils are soft.
