Pasta with artichokes and chanterelles | vegan
Pasta is probably the easiest and very comforting food for me. Here's a very simple, yet delicious recipe.
Servings: 2 Preparation: 10 min Cooking: 10 min
Ingredients:
170 g pasta of your choice + 1 tsp salt for boiling
100 g chanterelles
140 g canned artichoke hearts
1/4 cup black olives
1 small onion
2 cloves garlic
1/4 tsp white pepper powder
1/2 tsp dried basil
1 bay leaf
1/4 tsp salt
1/4 tsp black pepper
1 Tbsp white wine vinegar
1/2 cup water
vegetable oil for frying
Instructions:
Bring a pot with water to boil. Add 1 tsp of salt and the pasta. Boil according to package instructions.
While the pasta is boiling, prepare the sauce. Cut the chanterelles, artichokes and olives. Chop the onion and garlic.
Heat up a pan with a little bit of vegetable oil on high heat. Add the chopped onion and garlic. Fry for a couple of minutes and then add the chanterelles, artichokes and olives. Fry for another couple of minutes stirring occasionally. Pour in the water. When the water is boiling, reduce the temperature to medium.
Start adding all the spices and the vinegar. Mix everything well and let simmer until the pasta cooks.
Drain the pasta and add to the pan. Mix it well. Remove from heat and serve it while it's hot.
