Zucchini boats | vegan
Continuing the zucchini theme, here's another delicious recipe. Tasty, light and easy to make. Serve it with new boiled potatoes and fresh salad.

Ingredients:
2 medium zucchinis
1 medium carrot
3 medium white button mushrooms
1 cup cooked kidney beans
1 small onion
1/2 cup tomato puree
1 clove garlic
1/2 tsp ground black pepper
1/2 tsp salt
1 tsp dried oregano
olive oil
Instructions:
Preheat the oven to 200C.
Cut the zucchinis in halves length-wise. Scoop out the inside part of the zucchinis making it look like a boat.
Chop the mushrooms and put them in the bottom on the boats. Then put in the kidney beans.
Chop the onion, crush the garlic, and grate the carrot. Mix these ingredients with tomato puree, black pepper, salt, and oregano. Top the zucchinis with this mixture, drizzle some olive oil and put in the oven for about 30 min.
